Pork loin roast?

I have no idea what I'm doing.

I raise them not cook them!

Hope I do my pig justice.

Tips and tricks please.

Assume I know nothing...because truly I don't.

Have another roast in the freezer so I can pick one of your recipes and try it next time.

Help!

  1. Low and slow.. low temp over long time. The worst thing you can do is to cook too fast. If you peel some potatoes and place them in the pan toward the end of the cooking time for the roast, you can then baste the juices of the port roast over the potatoes (make sure you salt/pepper the roast AND the potatoes well), and you will have absolutely AMAZING potatoes to go with the roast. Apple sauce is a must have go-with. MMM getting hungry just looking at it :)

  2. I used salt and pepper but probably not enough. Was instructed to put 1 cup water in the dish, cover, and put in oven at 275 for several hours.

Per googling it is fat side up.

I read roasting is meant to be uncovered?

Don't want it to dry though.

  3. Uncovered is fine- fat and low temps will keep it moist.

  4. I love making these in the crock pot. Fat side up, add about 1/3 cup water for up about 1-1/4 pounds of meat. I add about a tablespoon of vegetable Better than Bouillon paste with the water. Cook for about 8 hours on low, or half that time on high. It'll be really tender and shred like pulled pork. When it's finished, add a few tablespoons of any kind of BBQ sauce to the meat while you're shredding it. This recipe is also really good: http://laurassweetspot.com/2013/06/12/crockpot-brown-sugar-balsamic-glazed-pork-tenderloin/

  5. I say low and slow too, and some kind of apple dish with it. Yum.

  6. Adding a bit of thyme, dried is fine, to the salt and pepper on the roast is good...using beer, white wine, apple cider hard or sweet, or chicken stock in the bottom of the pan instead of water is better...roasting on sliced onions is awesome for making oniony gravy after the roast is finished. Add mashed potatoes, braised red cabbage and applesauce for a perfect meal :)
