I've brined venison before to make a corned beef type meal. Super easy, it does have to brine for like 2 weeks but it is DELICIOUS. Also, "road kill"? I love venison. I also think we're pretty spoiled in this country with what we will and won't accept as food. A friend called us a couple of years ago that a doe had just been hit in front of his place, their freezer was full and did we want it? Um, hell yes I wanted pounds and pounds of free groceries.
Agree with both of you--- I love the resourcefulness/frugality of it also. It was once very common-- not unheard of in my area for people to eat turkeys, raccoons, turtles in addition to deer. Waste not, want not.
Sorry, i didn't mean my "roadkill"comment to come across as snippy. :) let's give it PR facelift: How about "mimivan meat" or "sedan steaks" ?. Lol. I forgot to mention if you're interested in pickling meat The Art of Fermentation book is a great resource.
I never heard of pickling it, but my sister cans it in tomato juice with a pressure cooker.

Technically its road kill, though it does carry a negative connotation. I could have used a different term.
